Our slightly larger diameter salami (2.5 inches), nitrite free, Uncured Genovese Salami is a bit milder in flavor as it relates to the more prevalent flavors of salt, pepper and garlic found in Zoe's Meats' Uncured Salami. We use also use a Pinot Grigio wine. Both are nitrite free and both feature a very lean pork/fat ratio. Our Genovese Salami has been featured on the menus at over 100 restaurants!
