Uncured Finocchiona Salami

Our nitrite free Finocchiona Salami started out as a Greek dry sausage.  After much trial and error, we realized that a similar recipe would make an amazing Finocchiona Salami. We used that recipe to offer the best fennel salami on the market, with layers of flavor including fennel seeds, orange zest, and garlic, but let's not forget the hickory smoked salt.

 

Ingredients: Pork, Sea Salt, Pinot Grigio Wine, Fennel Seeds, Pink Peppercorns, Raw Sugar, Natural Flavoring, Smoke Flavoring, Garlic, Orange Zest, Lactic Acid Starter Culture.
