Scrumptious Charcuterie Salads

 

Zoe’s BLT Salad

 

An American classic, the BLT is a heavenly harmony of bacon, lettuce and tomato.  When we created Zoe’s BLT we decided to forget the sandwich and serve it as a salad with homemade garlic croutons.  Perfect, bite size BLTs using Zoe’s Dry Cured Applewood Smoked Bacon.  Yum!  Serve it at your next family gathering, or enjoy as a light lunch or dinner.

 

Ingredients:

 

1 pound Zoe’s Dry Cured Applewood Smoked BaconDSC_0218_1.JPG

1 pound Heirloom or other seasonal tomatoes

1 small Romaine heart or other seasonal lettuce

1 small bunch basil

12 cloves garlic

1/3 cup balsamic vinegar

1 cup extra virgin olive oil

1 tsp salt

¼ red onion

½ loaf bread

1 stick salted butter

1oz orange juice

 

Bacon (the “B”):

Bake bacon at 375 degrees.  Flip if necessary.  Cook until bacon has achieved a red/brown color.  Remove from baking sheet and dice into 1 inch segments.

 

Homemade Garlic Croutons

Finely chop 6 cloves garlic.  Heat butter in sauce pan and sautee garlic.  Slice or cube bread.  In large bowl, combine bread, butter and garlic.  Place on baking tray and cook in a 375 degree oven until croutons are golden brown.  Remove from oven and cool.

 

Dressing:

Use food mixer or processor.  Add the following to the food processor: remaining garlic (6 cloves), red onion, orange juice, salt, basil and balsamic vinegar.  Mix together.  Slowly add extra virgin olive oil to the mixture.

 

Salad (the “L” and the “T”):

Cube tomatoes into 1 inch segments and place in mixing bowl.  Chop lettuce and add to mixing bowl.  Add cooled crostini, bacon and dressing (to taste).  Toss together and enjoy!

 

 

Zoe’s Spicy Charcuterie Frutosalata

 

 

A refreshing fruit salad with a little spice and some of Zoe’s finest.  Zoes’s Spicy Charcuterie Frutosalata combines the sweet flavors of seasonal fruits with the spice of Italy.  Far from a classic fruit salad, we add Zoe’s Charcuterie (cured meats) to create a fun and flavorful dish that will transport family and friends to sunny Toscana.

 

Ingredients:

 

Thin slices of each of the following:

Zoe’s Prosciutto

Zoe’s Dry Cured Coppa

Zoe’s Old Fashioned Mortadella with Pistachios

Zoe’s Fire Roasted Garlic Turkey Breast

And then…

1 peach

1 nectarine

4 good size strawberries

1 bunch fresh mint

6 cloves garlic

1 red jalapeno

1 tsp salt

¼ cup orange juice, freshly squeezed

¼ cup honey, preferably thyme honey

1 stalk green onion

 

Cut fruit into 1 inch cubes, or to desired size.  Place in large mixing bowl.  Chop mint, garlic, red jalapeno and green onion and add to bowl.  Add salt, orange juice and honey and mix well.  Let chill in refrigerator for at least 2 hours before serving.  Place meat on a large platter adjacent to fruit and enjoy!
